Maple Recipies
Here are some yummy and unique ways to use your maple syrup!
Maple Syrup Korean Teriyaki Chicken (Makes 5 servings)
• 1/4 cup soy sauce
• 1 cup water
• 1/3 cup maple syrup
• 3 tablespoons dark sesame oil
• 2 cloves garlic, crushed
• 1 tablespoon minced fresh ginger root
• 2 teaspoons ground black pepper
• 5 skinless, boneless chicken breast halves
• 1 cup brown rice
• 2 cups water
• 2 tablespoons cornstarch
Directions
Mix the soy sauce, 1 cup water, maple syrup, sesame oil, garlic, ginger, and pepper in a large resealable plastic bag. Set aside 1/3 cup of the mixture. Place the chicken in the bag, seal, and marinate at least 2 hours in the refrigerator.
Place the rice in a saucepan with 2 cups water, and bring to a boil. Cover, reduce heat to low, and simmer 45 minutes.
Preheat the oven broiler. Lightly grease a baking dish.
Pour marinade from the bag into a saucepan, and bring to a boil. Mix in the cornstarch, and cook and stir until thickened.
Place chicken in the prepared baking dish. Basting frequently with the reserved 1/3 cup marinade, broil 8 minutes per side, until juices run clear. Place chicken over the cooked rice, and top with boiled marinade to serve.

Roasted Sweet Potatoes and Vegetables with Thyme and Maple Syrup (Makes 4 servings)
• 1 pound sweet potatoes, cut into long, thin rectangles
• 1 large carrot, cut into long, thin rectangles
• 1 parsnip, cut into long, thin rectangles
• extra-virgin olive oil, or as needed
• salt and ground black pepper to taste
• 4 sprigs fresh thyme
• 2 tablespoons maple syrup, or to taste
Directions
Preheat oven to 375 degrees F (190 degrees C).
Scatter pieces of sweet potato, carrot, and parsnip onto a jelly roll pan; drizzle with olive oil and season with salt and black pepper.
Roast in the preheated oven until vegetables are partially soft, about 30 minutes. Scatter thyme sprigs over vegetables and drizzle with maple syrup. Return to oven and bake until vegetables are soft, about 15 more minutes.

Oatmeal Maple Syrup Muffins (Makes 1 dozen)
• 1/2 cup butter, softened
• 1/2 cup dark brown sugar
• 1/2 cup real maple syrup
• 1 egg
• 1 teaspoon vanilla extract
• 1/2 cup half-and-half
• 1 cup all-purpose flour
• 1 cup quick cooking oats
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• 1 teaspoon salt
• 1 teaspoon ground cinnamon
Directions
Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
In a large bowl, cream together butter and brown sugar. Beat in maple syrup, egg, cream and vanilla.
In a separate bowl, stir together flour, oats, baking powder, baking soda, salt and cinnamon. Stir flour mixture into egg mixture just long enough to incorporate. Spoon batter into prepared muffin cups.
Bake in preheated oven for 15 to 20 minutes. Remove from pans and place on a wire rack to cool before serving.

Maple Glazed Carrots (Makes 8 servings)
• 1 1/2 pounds baby carrots
• 1/4 cup butter
• 1/3 cup maple syrup
• salt and ground black pepper to taste
Directions:
Place carrots into a pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and transfer carrots to a serving bowl.
Melt butter in a saucepan over medium-low heat. Stir maple syrup into melted butter and cook until warmed, 1 to 2 more minutes. Pour butter-maple syrup over carrots and toss to coat; season with salt and pepper.

Maple Salmon (Makes 4 servings)
• 1/4 cup maple syrup
• 2 tablespoons soy sauce
• 1 clove garlic, minced
• 1/4 teaspoon garlic salt
• 1/8 teaspoon ground black pepper
• 1 pound salmon
Directions
In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
Preheat oven to 400 degrees F (200 degrees C).
Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.

Maple Walnut Bars (Makes 12 – 16 bars)
• 2 cups all-purpose flour
• 1/2 teaspoon baking soda
• 1/2 cup packed brown sugar
• 1/2 cup butter
• 1 cup real maple syrup
• 1 egg
• 2 teaspoons vanilla extract
• 1 cup ground walnuts
• 1/2 cup butter, softened
• 2 ounces cream cheese, softened
• 1 tablespoon light brown sugar
• 3 tablespoons real maple syrup
• 3/8 cup confectioners' sugar
Directions
Preheat oven to 325 degrees F (165 degrees C). Grease an 8 x 8 inch pan.
In a medium bowl combine flour and baking soda. Mix well and set aside.
In a large bowl with an electric mixer, blend brown sugar and 1/2 cup margarine to form a grainy paste. Scrape down sides of bowl, then add 1 cup syrup, egg and vanilla. Beat at medium speed until smooth.
Add the flour mixture and walnuts and blend at low speed just until combined. Pour batter into baking pan and smooth top with a spatula. Bake 40 to 45 minutes or until toothpick inserted into center comes out clean. Cool in pan.
To Make Maple Frosting: In a medium bowl, cream 1/2 cup margarine and cream cheese with an electric mixer at high speed. Add 1 tablespoon brown sugar and 3 tablespoons maple syrup, and beat until smooth. Slowly add confectioners sugar and reduce mixer speed to low. Once sugar is added mix until smooth. If frosting appears thin gradually add confectioners sugar until frosting thickens. Spread frosting on top of bars in pan and cut into squares.

Maple Breakfast Sausage (Makes 12 servings)
• 2 1/2 pounds ground pork
• 1/4 cup maple syrup
• 1 1/2 tablespoons chopped fresh sage
• 1 tablespoon salt
• 2 1/2 teaspoons fennel seed
• 2 1/2 teaspoons red pepper flakes
• 2 1/2 teaspoons garlic powder
• 2 1/2 teaspoons onion powder
• 1 teaspoon anise seed
• 1 tablespoon olive oil
Directions
Mix pork, maple syrup, sage, salt, fennel seed, red pepper flakes, garlic powder, onion powder, and anise seed in a large bowl until evenly blended. Shape pork into small patties.
Heat olive oil in a large skillet over medium heat; fry patties in batches until pork is browned and no longer pink in the center, 4 to 5 minutes per side.

Mapled Ham (Makes 12 servings)
• 1 (4 pound) boneless ham
• 1 (8 ounce) can pineapple slices, canned in syrup
• 10 whole cloves
• 2 cups water
• 1 cup maple syrup
• 1/4 cup brown sugar
• 2 tablespoons honey
• 2 tablespoons butter
Directions
Preheat oven to 350 degrees F (175 degrees C).
Prick the ham with a fork. Place the pineapple slices on the ham, securing with toothpicks. Press the cloves into the ham. Place the ham in a baking dish with the water.
In a saucepan over low heat, melt the butter, and mix in the syrup, brown sugar, and honey until heated through. Pour 1/2 the mixture over the ham.
Bake the ham 1 hour and 30 minutes in the preheated oven. Baste frequently with the remaining butter and syrup mixture.
Remove the ham from heat, and drain pan drippings into a saucepan over medium heat. Cook and stir until thickened, and serve with the ham.

Maple Apple Chicken Burgers (Makes 6 servings)
• 1/4 cup mayonnaise
• 2 tablespoons real maple syrup
• 1 tablespoon Dijon mustard
• canola oil
• 1 onion, sliced
• 1 Granny Smith apple - peeled, cored, and chopped
• 1 pound ground chicken
• 2 tablespoons real maple syrup
• 1 teaspoon Italian seasoning
• 1 egg
• 1/2 teaspoon salt
• 1/4 teaspoon pepper
• 6 tablespoons canola oil, divided
• 6 hamburger buns, split
Directions
Make the 'secret sauce' by whisking the mayonnaise, 2 tablespoons maple syrup, and the Dijon mustard together in a small bowl; set aside.
Heat 2 tablespoons canola oil in a skillet over medium heat; cook and stir the onion and about half the chopped apple in the hot oil until soft, 7 to 10 minutes. Set aside.
Mix the remaining uncooked apple, the ground chicken, 2 tablespoons maple syrup, Italian seasoning, egg, salt, and pepper together in bowl. Shape the burger mixture into 6 balls; the mixture will be loose, but that is okay.
Heat 1 tablespoon canola oil in a large skillet over medium heat. Place one of the balls into the hot oil and flatten with the back of spoon to create a patty. Cook until slightly brown on one side and then flip and cook the other side until cooked through, 5 to 7 minutes per side; repeat for each portion.
To assemble, place the chicken burgers on buns; top with the grilled apple and onions. Pour some secret sauce over the top of each burger. More secret sauce can be served on the side if desired.

Maple Bacon Monkey Bread (Makes 16 servings)
• cooking spray
• 1 (12 ounce) package bacon
• 1/2 cup margarine
• 3/4 cup packed dark brown sugar
• 1/2 cup maple syrup
• 3/4 cup white sugar
• 2 teaspoons ground cinnamon
• 2 (16.3 ounce) packages refrigerated biscuit dough, separated and cut into quarters
Directions
Preheat oven to 350 degrees F (175 degrees C). Coat the inside of a 9-inch fluted tube pan (such as Bundt®) with cooking spray.
Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels; crumble and remove extra fat.
Melt margarine in a small saucepan over medium heat; stir in brown sugar and maple syrup. Bring mixture to a boil; cook and stir until mixture begins to foam, about 1 minute. Remove saucepan from heat.
Mix white sugar and cinnamon in a resealable plastic bag; add 6 to 8 biscuit pieces at a time and shake until well coated. Pour any remaining sugar-cinnamon mixture into brown sugar mixture. Place saucepan over medium heat and cook and stir until sugar dissolves, 2 to 3 minutes.
Sprinkle 1/4 the bacon pieces in the bottom of the tube pan; pour in about 1/4 the brown sugar mixture. Arrange 1 layer of biscuit pieces in the tube pan; sprinkle in 1/4 the bacon pieces. Drizzle about 1/4 the brown sugar mixture over the biscuit pieces. Continue layering until all the ingredients are used, ending with a drizzle of brown sugar mixture.
Bake in the preheated oven until biscuits are cooked through, about 35 minutes. Allow to cool in pan, 10 to 20 minutes; invert onto a serving plate.
